At the min cho shrine 2 days in a row now the boss has just disappeared stopping the quest from advancing.

Happens to me too alot. You fight boss (ghost) for 2 seconds and its just gone. Only option after is waiting for quest to time out, since its not possible to pick up ritual blood again otherwise.
