Okay, I thought I'd make myself usefull with some actual numbers for a change.
You can find a screen-grab here to follow along with me. Now, for everyone's favorite subject: Math!

For starters, the base DPS on the Duskfang (from my inventory, i.e. not equipped) is 37.9. The base DPS on Callidus is 39.7. That's our measuring stick.

If I equip two Duskfang's, their DPS both increase to 42.8. That's an increase of 4.9 DPS. Ergo, 8.6 Dex + 4.6 Damage = DPS increase of 4.9

If I equip the Callidus and a Duskfang, the DPS of each goes up by 2.6. Ergo, 8.9 Dex + 2.3 Damage = DPS increase of 2.6.

You don't have to figure out exactly how much each stat raises DPS to see that Damage is much more important than Dex from a strictly DPS standpoint; but we're not lazy, lets do the math anyway.

I didn't take a screen-grab of this last comparison, so you'll have to take my word for it. What I checked was Cadillus base versus equipping Cadillus (Cadillus adds only Dex, not Damage...alowing us to get the DPS increase for Dex). The 4.6 Dex on Cadillus raises the Dagger's DPS from 39.7 to 39.8. That means 4.6 Dex = .1 DPS. But, we know AoC stats are rounded or cutt off to the tenths, so really all we can tell is 4.6 Dex <= .1 DPS. I assume, since people like nice round numbers, that it's 5 dex = .1 DPS, but we'll stick with 4.6 = .1 for now, since we know it to be true.

That means 1 Dex = .0217 DPS (I like to be more accurate than FC ). So if we look back at Cadillus + Duskfang, we know that 8.9 Dex + 2.3 Damage = 2.6 DPS. 8.9 Dex at .0217 DPS/Dex = .193 DPS (or .2 DPS rounded). THEREFORE:
2.3 Damage = 2.6 DPS - .2 DPS, or 2.3 Damage = 2.4 DPS. Again, people (and as shocking as it may seem, game devs are people too) like nice, round numbers. We can probably safely assume that the .1 Dmg-to-Dps descrepancy is due to rounding.

And thus, from a strictly DPS standpoint, we come to the conclusion that:
1 Dex = .2 DPS
1 Dmg = 1 Dps
